Sharing a meal with family and friends has always been an important part of our founder, Tim Brennan’s life.

 
 

Growing up in a big family, his mother loved to entertain spending her time hosting and cooking, each weekend there was always a lunch or party with lots of food shared down the centre of the table.

Tim loved how it brought everyone together. There was always smiles and laughter as delighted guests enjoyed great food.

Hosting comes naturally to Tim. As the years have passed, his love of entertaining has grown stronger. He has tried other careers, but he always knew in his heart that he wanted to be in a creative industry.

Eventually, after leaving his marketing career his passion led him to work at the world-famous Icebergs Dining Room & Bar on the cliffs of Bondi Beach.

It was here that he worked under industry leadering restauranter Maurice Tezzini and learned how to create a world-class dining experience. This inspired him to start his own company.

 

 

In 2012 Gallivant was born

 

One of Gallivant’s first jobs was a shared-style banquet in the stunning Blue Mountains.

The brief was to create a French-inspired feast. Guests were treated to canapes & cocktails in the garden followed by a 6-course banquet dinner shared down the center of the table.  

But, as is often the case in life, 
the best laid plans go awry!

The weather turned sour on the day. The Gallivant Team had to act quickly to avert disaster.

“Tim and his team were extremely professional and took everything in their stride. I was so impressed,” said the bride-to-be Katrina.

She continued, “The food was hands down the best part of our wedding. People are still raving it, which makes us feel so proud.“

“We wanted a gourmet feast and that is exactly what we received.”
